This loaf cake is perfect for a hot summers day. Both zesty and sweet I’ve no doubt you’ll love this easy, yet tasty recipe will become a firm favourite with you, your family, friends, neightbours… everyone!
What you’ll need-
- 175g Butter/spread/baking block
- 200g Caster Sugar
- 3 large free range eggs
- 2 Limes, Juiced
- 200g Self Raising Flour
- 1 teaspoon Vanilla Extract
- 2 tablespoons of Dessicated Coconut
For the Icing
- 150g Icing Sugar
- 1 lime juiced
- 1 teaspoon vanilla extract
- 3 tablespoons dessicated coconut
Method
- Pre-heat oven to 170 degree. Line a loaf tin.
- Whisk together butter and Caster sugar until fully combined and creamy texture.
- Add in your lime juice, vanilla & Coconut.
- Add eggs and flour alternating between the 2 a small amount at a time. Don’t add your wet mixture too fast as this is quite a wet mix and it can curdle.
- Whisk together until fully combined.
- Pour into your loaf tin
- Bake at 170 for 30 minutes. To check if they’re cooked insert a clean skewer into middle of the loaf if it comes out clean it is fuly cooked.
- Remove from tray and place on a wire rack to cool.
- When cake is cool, mix together icing sugar, lime juice & vanilla.
- Spread over loaf cake and sprinkle coconut on top.
- Enjoy with a cuppa!
