This vegan apple cake is an easy throw it all in the bowl kind of recipe. No seperate cooking your apples, so arranging apples in fancy shapes around the dish. Just throw it all in for the all in one apple cake.

Top tips for this cake

Cake tin – For this cake I recommend a springform tin. I use these ones. They’re really heavy duty and non-stick I love them, they’ve never failed me.

Electric hand mixer – Electric whisk is definitely not a necessity, but I love my hand mixer, it’s really quiet. Mine is a kitchen aid hand mixer, but for years before I invested I had several cheap electric hand mixers and they all worked great.

What you’ll need-

  • 300g Apples (About 3 apples)
  • 170g Butter/Dairy free baking block
  • 100g Caster Sugar
  • 110g Light Brown Sugar
  • 250g Self Raising Flour
  • 160ml Plant Milk
  • 1 tsp Vanilla Essence

Topping

  • 4 Tablespoons Icing Sugar
  • 4 Tablespoons Plant Milk
  • 1 teaspoon Vanilla extract

Method

  1. Grease/line a springform cake tin (15-20cm). Preheat oven to 175C.
  2. Chop Apple into small chunks, disposing of core, I leave the skin on, but you can remove it if you would prefer, put to one side to use later
  3. To a large bowl add butter, sugars, flour, plant milk and vanilla
  4. Whisk together until mixture is fully combined.
  5. Fold in the apple chunks into the cake mixture, ensuring they’re evenlt spread throughout the mixture
  6. When mixture if fully combined spoon mixture into the cake tin and put in the oven.
  7. Bake for 50 minutes.
  8. When done leave to cool before removing from tin.
  9. Mix together topping ingredients and pour over cake.
  10. Serve immediately!
