These biscuits are a perfect treat for Santa! A delicious twist on the classic jammy biscuits.
What you’ll need-
250g Butter/Baking Block
400g Plain Flour
1 Egg Yolk
150g Caster Sugar
1 tsp Vanilla extract
Lemon Curd
Method
- Line several baking trays with baking sheets.
- Cream together Butter and sugar until fully combined.
- Add in Vanilla and egg yolk.
- Gradually add the plain flour and mix into a dough.
- When mixture is fully combined it should form a dough.
- Cover the dough and refrigerate for about an hour.
- Roll out dough to around half a cm thickness.
- Cut out your shapes, I used a cutter for the inside that was around half the size of the larger shape. Cut your shapes in an even number. And cut a hole in the middle of every 2nd shape.
- Place all shapes on the baking tray and transfer back into fridge for another hour.
- Pre-heat oven to 200 degrees.
- Bake biscuits for 10 minutes or until biscuits begin to darken in colour.
- Wait for biscuits to fully cool.
- Sift icing sugar on the top halves of the biscuits.
- Spread a thin layer of lemon Curd onto the bottom halves of the biscuits, then add the tops.
- Enjoy!
