These biscuits are a perfect treat for Santa! A delicious twist on the classic jammy biscuits.

What you’ll need-

250g Butter/Baking Block

400g Plain Flour

1 Egg Yolk

150g Caster Sugar

1 tsp Vanilla extract

Lemon Curd

Method

  1. Line several baking trays with baking sheets.
  2. Cream together Butter and sugar until fully combined.
  3. Add in Vanilla and egg yolk.
  4. Gradually add the plain flour and mix into a dough.
  5. When mixture is fully combined it should form a dough.
  6. Cover the dough and refrigerate for about an hour.
  7. Roll out dough to around half a cm thickness.
  8. Cut out your shapes, I used a cutter for the inside that was around half the size of the larger shape. Cut your shapes in an even number. And cut a hole in the middle of every 2nd shape.
  9. Place all shapes on the baking tray and transfer back into fridge for another hour.
  10. Pre-heat oven to 200 degrees.
  11. Bake biscuits for 10 minutes or until biscuits begin to darken in colour.
  12. Wait for biscuits to fully cool.
  13. Sift icing sugar on the top halves of the biscuits.
  14. Spread a thin layer of lemon Curd onto the bottom halves of the biscuits, then add the tops.
  15. Enjoy!
